Seitan’s Buffalo Chickun pizza has a long history in Edmonton’s vegan cuisine scene. Originally the star menu item at Die Pie, Chef Neil Royale’s previous restaurant on Jasper Avenue, the pizza started out as a feature that quickly made its way onto the restaurant’s permanent menu. One of Die Pie’s most beloved dishes, fans were thrilled to see it back in action at 5th St. Food Hall.
The pizza was inspired by Royale’s wife Bonnie Bentley.
“She was like, "Why don't you make a spicy buffalo chicken pizza?” So I took the idea and started making it at home, even before we opened Die Pie,” says Royale. “I decided to deconstruct Buffalo wings with blue cheese ranch dip onto a pizza.”
The Buffalo Chickun pizza is the perfect balance of the iconic flavours that make buffalo wings a pub favourite: spicy hot sauce and rich, creamy ranch, all lovingly piled on a sourdough crust.
Seitan’s dishes are 100% plant-based, and the ingredients are made in house. For years, Royale has been perfecting his vegan cheeze recipe. All of Seitan’s pizzas start with a thin sourdough crust that brings extra flavour and complexity to the dish.
“The tang from the gorgonzola and the fresh arugula and dill helps cut the richness of the sauce and cheeze,” says Royale. It’s this blend of tastes and textures that makes the Buffalo Chickun pizza one of the best pizzas in Edmonton.
This is not your typical vegan cheeze. It’s creamy and rich, and even fools some non-vegans with its flavour and texture. The blend of cheeze, greens, sauce, and Royale’s famous chickun make this pizza a complete meal.
