Every great dish starts with a seed of inspiration from the chef that created it—EPIC seeks to nurture these seeds. Our unique approach sees a diverse group of chefs “in residence”, using their creativity to guide their own tasting menus that features a diverse range of world cuisines and signature dishes, designed to be sampled together and shared.
World Cuisines
Our menu features a variety of world cuisines, each with its own unique flavour profile and cooking techniques. Between Italian, French, Asian-fusion, plant-forward, and tapas-inspired, there is something for everyone. Some of our popular world cuisine dishes include:
Prawns Flambé: a beautiful plate of Pacific king prawns, flambéed with Sambuca in a seasoned butter sauce with fine herbs, and served with toasted house-made focaccia. Recipe by Chef Peter Keith.
Beet & Blueberry Salad: delicious pickled beets, blueberries, and oranges on a bed of greens, drizzled with blueberry vinaigrette and topped with housemade spiced walnuts for the perfect mix of flavours. Recipe by Chef Oliver Butterworth.
Taiwanese Fried Mushrooms: seasonal mushrooms soaked in a tamari, sesame oil, and Chinese 5-spice marinade, then fried to golden brown and tossed in Taiwanese spice mix, for an explosion of flavours with every bite. Recipe by Chef Winnie Chen.
Bruschetta: a mix of cherry and vine tomatoes, diced with garlic, pesto, basil, olive oil and balsamic glaze on a piece of toasted housemade focaccia and topped with grated parmesan and fresh basil, ready to take your tastebuds to Italy. Recipe by Chef Lindsay Porter.
Crème Caramel: a classic French dessert. A base of caramel topped with creamy custard, cooked in a "bain marie" (water bath), and chilled overnight, during which the caramel at the bottom of the container dissolves and becomes a luscious sauce. Recipe by Chef Alex Edmonson.

Cherry Duck Breast: it all starts with Meuwly’s smoked duck, which is cured with cinnamon, rosemary, and pepper, then smoked with beechwood. Then we add sour cherry preserves, apple, hazelnut to hit all the flavour profiles and make a delicious appetizer. Recipe by Chef Peter Keith.
Caramelized Onion Labneh: herbed yoghurt that is strained to get a thicker and cheesier consistency, topped with caramelized onions, pickled shallots and grapes, pine nuts, and drizzled with a balsamic glaze. Honey Butter Fries: crispy Kennebec potatoes glazed with rich brown butter and the sweet amber honey, elevated with a hint of truffle and chili flakes for that perfect kick. Topped with fresh parsley for a burst of freshness. Recipe by Chef Winnie Chen.
Mushroom Arancini: Arborio rice is formed into a ball, stuffed with porcini, wild mushrooms, and truffle oil, then breaded and gently fried to perfection. Served with balsamic glazed apples for a hint of sweetness. Recipe by Chef Lindsay Porter.
