Introducing one of our talented Chefs in Residence, Peter Keith, who is also the co-founder of a popular Artisan Food Market in Edmonton: Meuwly's. We sat down with Peter to chat about how he started in the industry and his menu concept at EPIC: Carne!

Tell us a bit about you, Peter.
"I am an entrepreneur and chef, here in Edmonton, and I am one of the co-founders of Meuwly's, which is a charcuterie business on 124th street."
Why did you partner with EPIC?
"So, I have always been looking for the next way to get my food out there in the community, and test drive a menu and, you know, just have that creative outlet, so working with EPIC has been a really great way to showcase some of my food."
Tell us about your menu concept at EPIC, Peter.
"My food concept here at EPIC is called Carne, which is Spanish for 'Meat'. We are taking a lot of inspiration from charcuterie, cured meats, and other tapa-style small bites of food, with a lot of European influence, but not being shy to include our favourite flavours from around the world. You can expect to find things like flambé prawns, a charcuterie board, some other snackable cured meats, and then our smoked duck breast which is one of my favourites. It is a cured and smoked Canadian duck breast, paired with fresh green apple, hazelnuts, and sour cherry."
What made you want to become a chef?
"I actually started cooking professionally when I was 14 years old, so as soon as someone would hire me, I got a job in a kitchen and I wasn't too sure why I was really into it at a young age, but as I have spent more time in the industry I've realized that I just love hospitality. I really love being able to create something delicious and share it with people, especially when I get to see their reaction and see the enjoyment that it brings their day. So, for me, cooking is all about that passion, that love for hospitality, and we really hope you'll come check it out here at EPIC!"
